From Tree to Table: How Maple Syrup is Made at Toad Hill

From Tree to Table: How Maple Syrup is Made at Toad Hill

There’s something magical about maple syrup — sweet, golden, and deeply tied to the land it comes from. At Toad Hill Maple Farm in Thurman, NY, that magic begins each spring, when sap flows from the sugar maples tucked into the Adirondack hills.

But how does it go from tree to table? Here’s a behind-the-scenes look at how we make every drop of our pure Adirondack maple syrup — by hand, with pride.

1. The Sugarbush: Where It All Begins

Our sugarbush — the grove of sugar maple trees that powers everything we do — sits on the wooded slopes of Toad Hill. These trees are tapped each late winter or early spring, when temperatures rise above freezing during the day and dip below at night — the perfect conditions for sap to flow.

💡 Did you know it takes about 40 gallons of sap to make 1 gallon of syrup?

We use a mix of traditional buckets and modern tubing systems to collect sap efficiently without damaging the trees. Sap is clear, watery, and only slightly sweet when it first comes out of the tree.

2. The Boil: Turning Sap into Syrup

Once collected, the sap is transported to our sugarhouse. This is where the real transformation happens.

We boil the sap using a wood-fired evaporator — a method we’re proud to maintain for its flavor and connection to tradition. The fire burns hot under stainless steel pans, where the sap is slowly reduced and concentrated into syrup. It fills the sugarhouse with a sweet, rich aroma you won’t find anywhere else.

As water evaporates, the sugars concentrate. We monitor the temperature carefully — syrup finishes at about 219°F, slightly above the boiling point of water.

3. Filtering & Grading

After boiling, we filter the syrup to remove sugar sand (minerals that naturally occur during boiling). The result is a crystal-clear syrup with rich flavor.

Each batch is then graded by color and taste using state standards:

  • Golden Delicate – Light in color, subtle flavor

  • Amber Rich – Classic maple flavor (most popular)

  • Dark Robust – Strong, hearty maple taste

  • Very Dark Strong – Bold and great for cooking

Toad Hill specializes in Amber Rich and Dark Robust, perfect for pancakes, glazes, and drinks.

4. Bottling & Packaging

Every bottle is filled and sealed by hand right here on the farm. Whether it’s a classic jug, decorative leaf bottle, or our fun moose-shaped glass, each package is labeled with care and shipped fresh.

We never add preservatives, artificial flavors, or colorings — just 100% pure maple syrup from our trees to your table.

5. Why Our Syrup Tastes Like Home

The flavor of maple syrup is influenced by soil, weather, and even elevation — which is why syrup from the Adirondacks has a unique, full-bodied taste that sets it apart. At Toad Hill, we think you’ll taste not only quality, but the care and tradition that goes into every drop.
